It’s the icing on the cake or the brownies or the cupcakes. It’s that thing that makes anything taste better. Well, at least when it comes to dessert. Chocolate frosting is a universally delicious treat and a vegan frosting is just more accessible to the masses of delicious dessert eaters.
This recipe comes from my cookbook, “Done with Dairy. Giving up Gluten; 14 Days to a Delicious and Healthy You” – a guide for those who want to or have to go gluten and dairy free overnight.
Vegan Frosting
3 Cups Confectioner’s (Powdered) Sugar
2/3 Cup Cocoa Powder
½ Cup Earth Balance Butter Substitute
1 tsp Vanilla Extract
¼ Cup Almond Milk
Place all ingredients in a mixing bowl. Using the Masha in an up and down motion, blend all ingredients together.
I was SUPER impressed with how well this blended. I mean I am FAMOUS for my chocolate cake and this vegan frosting. I get so frustrated with even my Kitchenaid mixer because it doesn’t always blend the lumps of powdered sugar, cocoa and butter well. Most people don’t notice those little lumps but I do and it’s just not ok. The Masha blends it PERFECTLY! No lumps AT ALL.
On this particular cake that I made for the baby shower of a dear friend, the icing was a little too wet for me. I adjusted the recipe for less almond milk. If you think your icing is too thick, just add about a teaspoon at a time to the mixture to thin it out a bit. Icing needs so little moisture in it to thin it out so be careful!
This cake was devoured in less than ten minutes. The frosting was a huge hit! I guarantee that this frosting will be a huge hit for you as well. In fact, people will have NO clue that it is vegan. The ingredients make it delicious. The Masha makes it perfect!!!
