I have a famous client who made a request for Shepherd’s pie one day.  This client asked for a little twist and requested black olives and raisins in it.  I thought, why not?  So I tried it and it was AWESOME!  Now I don’t want to make it any other way!

What makes it skinny?  No dairy.  None.  You can use dairy in your potatoes if you want but I used Earth Balance butter and chicken broth instead.  I have also used lean turkey meat instead of the traditional beef or lamb found in most Shepherd’s Pies.
So here is what you need:
Skinny Shepherd’s Pie
  • 1 Package of Lean Ground Turkey Meat (about 1.3 pounds)
  • 1 Onion Finely Chopped
  • 1 Bag Frozen Organic Mixed Vegetables (carrots, peas, corn, green beans)
  • ¼ Cup Organic Unsulfured Raisins
  • 1 Small Can Sliced Black Olives
  • 5 Gold Potatoes
  • 1 Cup Organic Chicken Broth (plus more for potatoes)
  • 1 teaspoon EVOO
  • 4 Tablespoons Earth Balance Butter
  • Salt and Pepper to Taste

 

Peel, chop and boil your potatoes until tender.  Remember that when you use the Masha, you don’t have to chop the potatoes finely.  Big chunks work great and take less of your valuable time!
 
Preheat oven to 350.
First sauté the onion in a skillet until browned (it adds flavor!).
 
Add the ground turkey and sauté until browned.  Then add the black olives, raisins, frozen vegetables and chicken broth to the skillet.  Stir often as it simmers for about 20 minutes.
When the potatoes are tender, drain the water.  Add the butter, about ¼ cup of chicken broth, salt and pepper then Masha away!  Add more chicken broth, butter, salt or pepper to taste.  Get the consistency and flavor that you want.
 
When the turkey mixture is ready, it should have some broth in it.  If not, add some so it does not dry out in the oven while baking.  Just add a little, perhaps a few tablespoons to ¼ Cup.  Now, pour it into a 9×13 inch Pyrex baking dish.  Now, add the mashed potatoes to the top by spooning them on in dollops.
When the potatoes are on top, smooth them out with the back of the spoon and form into peaks.  Potatoes mashed with The Masha make such perfect potatoes that you won’t have any trouble forming them into peaks that will brown a little.
Last thing, place the whole thing, uncovered, in your oven warmed to 350 degrees.  Bake for about 30-40 minutes or until potatoes are a golden.
 
Now, eat up!  It’s a complete meal that the Masha makes perfect, every time.
