I love leftovers. Not because I want to eat the same thing over and again but for the incredible opportunities they present for something new and different.
When I lived at my Country Inn, Harmony Oaks, years ago, I became a pro at creating something new and wonderful from a dish I served the day before. I have never been tolerant of waste – especially with food. I want every tasty morsel.
This morning I had some soggy left over roasted cauliflower. It looked pretty gross actually – all burnt and wet. I think most people would look at that and toss it in the trash. I looked it and thought delicious omelet that will be sure to fill me up and make me feel nourished.
I tossed it into a hot pan with a little olive oil waiting there to coat it and crisp it up a bit.
I want flavor – ALWAYS flavor. My palate demands deliciousness and I would guess that yours does too.
I added curry powder, turmeric, chili powder, and cayenne pepper. I stirred it until it was aromatic and heated throughout. Then I placed it on a plate, waiting for the scrambled eggs to be ready to receive it.
I don’t flip my omelet in the pan. I like the inside to be a little wet. Over dried eggs are like overcooked fish in my opinion. They lose their flavor and don’t lend much pleasure to the palate.
I finished this one with some Cholula hot sauce. It is my go to sauce since it is not too spicy and not too vinegar filled.
I cannot begin to tell you how amazing this omelet was. It took less than 5 minutes to make and offered tons of flavor filled pleasure to eat. So amazing. So delicious!!!
Think about what you might have in your refrigerator or pantry and how you might spice it up and turn it into something new. Get creative and don’t worry about how much of this or that.
Just spice it. Taste it. Tweak it. Make it yours then enjoy the heck out of it!
