INGREDIENTS:
- 2 large Chicken Breasts (halved into 2 thin but full size fillets)
- 2 teaspoons ground Cumin
- 2 teaspoons ground Coriander Seed
- 2 teaspoons ground Paprika
- 2 teaspoons Dried Thyme
- 1 teaspoon Cracked Black Pepper
- 1 teaspoon Salt
- 1 x large (or 2 x small) potato per person
- 2 x wedges of Preserved lemon – diced
- 1 x handful fresh parsley, finely chopped
- 1/2 cup cream
- 50g butter (unsalted)
- White pepper & Salt (for mash)
- 1 x clove garlic whole – skin left on
DIRECTIONS:
- Peel & Chop your potatoes and add them to a pot of boiling water, along with a pinch of salt and your garlic clove. Cook until a knife cuts through the potato easily. Drain and set aside to keep warm:
- Lay out a large sheet of baking paper. Sprinkle half of your spice mix (Cumin, Coriander Seed, Thyme, Paprika, S & P) over one side and lay your chicken breasts on top. Sprinkle the remaining spice mix over the top of the chicken and then fold over the other half of the baking paper;
- Grab a rolling pin or similar and give the chicken a bit of a smack a few times to flatten the thicker ends and make sure they are all of an even thickness. This will also help the spice mix to stick to the chicken;
- Cook your chicken on a BBQ or hot grill until just done. Depending on the thickness of your chicken it should only be about 3 – 4 minutes each side; Set aside under some foil to rest.
- Grab your potatoes now and add your butter. Using the Masha, whizz it up for about 10 seconds before adding your butter, cream, white pepper & salt;
- Now add your garlic clove (squeeze it out of its skin) and mix for another 20 seconds or so. You will see how well (and how fast!!) the Masha makes the potatoes super creamy and perfectly smooth.
- When you are happy with the consistency, add your diced lemon and chopped parsley and mix with a spoon before serving onto pre-heated plates;
- Slice up your chicken (I like to soak the slices in the juices a minute to keep it super tender!) and add to your plate of zesty mash.
- A small dish of Harissa & Yogurt would make a cheeky addition to this meal.
