Today a private chef client asked me a question I get often; “How do you stay so thin?”
I used to recite the list of what I don’t eat – gluten, dairy, sugar, grains, processed foods, and soy. Every time I ran down that list the person would say with great shock, “What else is there?” To avoid that question coupled with a certain look of bewilderment, I told him what I do eat instead.
Last night for dinner I had home made ginger carrot soup with organic chicken with a home made lemon, mint, basil pesto. I was stuffed! I mean it was super delicious, I was totally satisfied and I was stuffed. The thing is that psychologically we think that we have to have rice, potato, quinoa, bread or some other carbohydrate in order to feel satiated but we don’t. We can eat vegetables until we are full.
I eat well. I eat tons of organic vegetables, green smoothies, organic chicken, fish, organic beef, lamb, eggs, and on rare occasions, I have quinoa, brown rice or potatoes. I eat very simply but I am a sucker for flavor. It MUST taste delicious or I’m not so happy with it.
Staying thin, I have found, is 90% diet and 10% exercise. I do exercise I enjoy like walking, hiking, a little bit of free weights and lifting hundreds of pounds of groceries each week up stairs and hills to work in a kitchen all day long. It’s a lot of exercise and the diet is what makes thin possible.

Sounds really good . I’ve been eating so much better since I’ve been out here . Exposure and learning new concepts has definately been a huge impact on my choices . And I’m having more fun in the kitchen preparing . Once things pick up I’m totally buying your books
