It was a couple of days after Thanksgiving when I woke up with a hankering for French toast.  I stay away from sugar as much as possible to stay healthy and fit but sometimes, I just have to have a sweet breakfast and I happened to have all of the ingredients so it was a win all around.

I have this recipe in my cookbook, Done with Dairy, Giving up Gluten; 14 Days to a Delicious and Healthy You.  It was just me and I decided not to over indulge so I cut the recipe in half.  I used the Frotha with the whisk attachment to tackle a half recipe of this delicious egg batter but I would definitely use the Masha for the full recipe.  Your call.  Either way, using the Frotha or the Masha for eggs and batter is way better than using a whisk.

Here’s the full recipe.  It should feed about four hungry people at about 10-12 slices of bread.

6 Eggs

½ Cup milk (I used Almond, Hemp, Rice or Soy milk to make it dairy free)

2 teaspoons ground cinnamon

¼ teaspoon ground nutmeg

½ teaspoon vanilla extract

1 loaf of your favorite bread (I used Udi’s Gluten Free Whole Grain)

First, add all the ingredients together in a mixing bowl.  Use the Frotha for a half recipe or the Masha for a full recipe.  Note that you can use either tool for either decision.  I just think the Frotha does better with smaller amounts of egg batter whereas the Masha is amazing for multiple eggs.

Next, while your pan is heating up on medium high, place one slice of bread at a time into the egg batter mixture and allow it to soak for only a few seconds before turning it over to the other side.  If you allow it to soak too long, the bread can get soggy and fall apart.  Udi’s gluten free bread holds together very well in this batter so it can soak a little longer than white sandwich bread.

Place a pad of butter in the heated pan then place your French toast in it.  Repeat the bread soaking in the batter and placing it in the pan to fit as many pieces as will easily flip.

After about two minutes, you can flip the toast.  You can always lift it slightly to see if it’s the golden brown color you like to see.  When it is cooked to your preference, remove it from the pan and place it on a plate.  Use butter, syrup, honey, fruit, preserves, confectioner’s sugar as possible toppings.

French toast also makes a wonderful choice for a turkey or ham and cheese sandwiches.  It’s easy to make it ahead for the week.  Just pop it in your toaster or oven to toast it up.  Bon apatite!
