It was dinner time and I was really hungry. I was going to make my usual chicken with vegetable and some kind of sauce dinner when a much brighter idea fell into my head. Pancakes! I wanted pancakes but I did not want to make them a classic recipe so I ended up coming up with this recipe.
Here’s what you will need:
1 Cup brown rice flour
¼ Cup ground flax meal
1/3 Cup shredded unsweetened coconut
¼ tsp xanthan gum
2 teaspoons baking powder
2 eggs
¼ Cup Extra Virgin Olive Oil
3 Tbsp honey or agave syrup
1 ½ Cups Almond Milk
First, place the first five ingredients into a mixing bowl (dry ingredients) and use the Masha to blend them together. Then add the wet ingredients to the mix.
Use the Masha to blend them together effortlessly and perfectly. It’s so much easier than using a whisk and it incorporates all the ingredients together much better than anything I have used.
Heat a pan to medium high and melt a pad of butter in it. Using a measuring cup or a ladle, spoon batter into the pan to desired pancake size. When the pancakes have bubbles in them, it’s time to turn so they won’t burn! Cook the other side of the pancake for about one or two minutes more then put them on a plate and top with syrup, butter, jam, honey, yogurt, fresh fruit, chocolate, powdered sugar, or whatever your heart desires!
